My Secret Ingredient: Pink Peppercorns

Secret ingredients in my house are a way to take our usual Tuesday night dish and add a bit of flare.  When you have picky eaters who are not quite willing to try that new dish you find ways to spice up the routine.  One of my favorite ways to spice up a dish is to add Pink Peppercorns.  They are a versatile spice allowing for many variations on a traditional recipe

 I love a well traveled interesting spice and Pink Peppercorns fit the bill.  Originating in Peru (Schinus molle) and it's Brazilian counterpart (Schinus terebinthifolius) also called baies roses, this spice has all the characteristics a foodie loves.   It's slightly sweet, fragrant and delicate. Offers a hint of mild citrus zest and possess well rounded pepper flavor with a heat similar to a chile.  Think berry with an attitude and you've got it. 

Whether freeze dried or brined pink peppercorns are just plain fun to use.  You can literally substitute pink peppercorn where you would normally use black pepper for a unique culinary experience at any time.  Pork tenderloin with burgundy peppercorn sauce substituting "peppercorn" with pink peppercorn is delicious. When I was first introduced to pink peppercorns I just snacked on them whole.  Now please note I did not consume large quantities of this spice.  Consuming large quantities can be toxic. But I found snacking on them whole let me experience it's flavor without being distracted.  I've found it plays well with garlic, lemon grass and chiles.  It's fruity side and well rounded chile like heat makes for interesting curries.
